Farming since 1983, Vehbi Ersoz always thought there were some problems with the conventional farming methods. Using a different pesticide for each varmint and a different fertilizer for each missing substance in the soil made him question the function and procedures in conventional agriculture. Favoring a more holistic perspective in agriculture, he tried many methods to enrich the soil and increase the soil microorganisms, which in turn do the actual work. Analysis of the distribution of organic farming and its determinants is a major challenge for the construction of scenarios related to the evolution of organic farming that take the set of factors that limit or facilitate conversions and their sustainability into account. Beating the economies of scale through local food Organic Eprints

Often local and organic food producers and their supply chains face two main challenges: high logistical costs and complex distribution, and estab-lishing lasting relations with the consumers. Conven-tional supply chains drive the costs down through benefits of economies of scale and have therefore a competitive advantage over the small initiatives. At the same time the conventional supermarket chains are part of a bigger food system and cannot efficiently meet changing consumer demands. Remote rural areas in East Germany are confronted with severe problems like a high unemployment rate and the migration of young people. Ce travail s’inscrit dans un projet de recherche visant à identifier les formes d’organisation innovantes à l’échelle des territoires susceptibles de faciliter les transitions vers l’agriculture biologique. Unter den vielen, in den letzten Jahren entstandenen regionalen Vermarktungskooperationen zwischen LandwirtInnen bzw. zwischen LandwirtInnen sowie Verarbeitungs- und Vermarktungseinrichtungen sind einige sehr erfolgreiche Initiativen zu finden. Growth processes are often problematic for small-scale farms as they may disturb their delicate balance of basic internal resources, like labor, buildings, machinery, land and animals. Most of these resources cannot be increased in linear processes and the smaller the unit the more problematic the task of realignment of resources becomes. Thus small-scale farmers often feel growth as enforced upon them by outside factors, e.g. a market partners.
